1. The Librarian was also married to the Didact, but saw that he was corrupt and not doing what was right via...
2. The Mantle of Responsibility. Jon hit the nail on the head with that one. Basically it was their belief that they should rule over everyone and cultivate life where needed and destroy it where needed, etc. More info on that here.
3. As for the humans there's a bit of a long backstory for this. So let me break it down as much as I can. This is ALL BEFORE the Halos fired. Humanity and Forerunners were once on the same technological scale, Tier 2, according to the Halo wiki. They were rivaling with the Forerunners technologically speaking and even had a peace agreement with the San 'Shyuum (the Prophets). Basically, humanity was the first to encounter the Flood around 110,000 BC and they started to fight it and try to eradicate it, The Human-Flood War. The Flood was at the same time, invading Forerunner colonies. So as the humans tried to eradicate the flood, they had to eradicate Forerunner colonies.
The Forerunners believed this to be an act of aggressive expansion and started a war with humanity. The Forerunner-Human War, which because the humans were fighting both the Flood and the Forerunners resulted in a Forerunner victory and the dismantlement of the advanced society of humanity, we basically reverted back to the cavemen days.
As I said before though, humanity had found a way to beat the flood, but that was lost in the Human-Forerunner-Flood War. So once the Flood attacked the Forerunners and they became aware of it, the Forerunners stood no chance. The Shield Worlds were made, the Halos were made and ultimately fired.
During this time, the Librarian knew that humanity would be the ones to rise up after the Forerunners, and chose them for the Mantle.
All of this is explained in the Halo 4 terminals, but for more info go here for the advanced human society.
Human-Flood War.
Human-Forerunner War, which went on concurrently with the Human-Flood War.
Forerunner-Flood War, which ended with the destruction of all life in the galaxy by the firing of the Halo arrays.
